Silverbeet salad with Bacon

Ingredients

200g silverbeet
4 tablespoons olive oil
1 tablespoon lemon juice
1/5 teaspoon mustard
1 teaspoon honey
salt & pepper
50g pine tree nuts
100g bacon pieces

Directions

Wash the silverbeet, cut (only the leaves) in thin strips and place in a bowl. Mix the other ingredients for the vinaigrette and mix through the salad. Roast the pine tree nuts and place on the salad. Bake the bacon pieces (nice and crunchy), and serve over the salad when still warm.
